Sprouted Devilled Eggs with BAcon

Let me guess, you read the title and thought, “Whaaat?  How do you sprout eggs?”  Well, you add sprouts!

I LOVE devilled eggs, I’m not a fan of pickled eggs, but devilled, oh yeah!  (Maybe its the name calling to my wanna be badass side of life!)  I think devilled eggs are one of the best party foods, they are loaded with protein and fill you up before you stuff your face with all the other good stuff that may be layed out in front of you.

I thought I’d dress up the devilled eggs today and really wanted to step out of the box.  If you follow my blog, you’ll know I’m into sprouts right now, check out my Sprouts: Grow them & eat them post as well as my guest post Chicken & Sprout Veggie Salad to find out what else I’ve done with sprouts(hint, there’s more sprout posts to come!)

You have to try these, the sprouts and bacon add a delicious crunch to the eggs.  I mean a typical devilled egg is so delicious with that silky smooth filling that just melts in your mouth, but the crunch……what an unexpected surprise!  I knew the bacon would be good, I mean it’s bacon, come on anything with bacon is good!

Sprouted Devilled Eggs with Bacon

Ingredients

3 hard-boiled eggs

1 tbsp mayo(preferably homemade)

1 tbsp sprouts (it’s really hard to measure sprouts, so a small pinch will probably work)

2 strips bacon(preferably from a grass-fed source)

Okay, so start off with the hard-boiled eggs, peeled and cut in half.  Pop the egg yolks out into a bowl and then add in the mayo and sprouts.  Mix thoroughly and spoon the mixture back into the eggs.  Fry up your bacon and top each egg with a small piece of bacon.  (I’ll be honest, I fried up a whole package, and ate probably half of it!)

Voila!  You’re done, make it next time you have guests!

    I’m stopping by from the Let’s Get Real Friday Link Party. This recipe looks great. We made deviled eggs this afternoon with crumbled up bacon.. Ohhh Boy! They were good. I’ve never had sprouts in them before, but I like them in other things. Thanks for the idea.
