Paleo Slow Cooker Beef Stew

It’s cold and windy out and your chilled to the bone.  What better way to warm up than with a hot bowl of stew?

Stew is one of those ultimate comfort foods.  There is all kinds of stew, curried stews, gravy-like stews, tomato based stews.  A stew is one of those great dishes because you can through a whole lot of flavor into a single dish.  Not only that, there really is no wrong way of making stew, you put a little of this and a little of that and you toss in ingredients and voila you have a stew!!

 

I have for you today a tomato based stew, I’m not a fan of gravy-like stews (much to my hubs’ dismay, he always asks for gravy-like stews), but since I’m the one cooking, he gets tomato based stews lol.  Maybe one day I’ll make a gravy-like stew, one day. :)

Ingredients

stewing beef(about 3 lbs)

1tsp of onion powder

1tsp of garlic powder

1 tsp paprika

sweet potato, cubed (about 1lb)

1 small to medium onion, chopped

4 cups beef stock

4-5 carrots-chopped

1 15-16 oz can tomato sauce(preferably organic and bpa free)

 

To begin, brown stewing beef in a frying pan, with spices.

Next place stewing beef in slow cooker along with remaing ingredients.  Place on high for 4 hours.

  1. Gonna give this a try, I usually make stews gravy based but want to vary it with tomato based sauce.This sounds yummy and simple. My hubby usually eats all the meat (and very few veges) so with 4 lbs of stew meat he’ll get his fill and I’ll have some left over for the next day. Thanks :)

    • Oopps, I mean 3 lbs of meat, I usually use 2 lbs…

    • It is quite good! As much as my hubs loves the gravy based stews, he had no problem eating this tomato based one! lol
